Chicken Caesar Rice Bowl

Ingredients

2 cups rice

4 cups water

2 packets of knorr chicken stock

1/4 cup fresh diced parsley

1 romaine heart chopped

1 small red onion diced

2 chicken breast chopped into pieces

1 cup BBQ sauce

1 cup Parmigiano Reggiano grated

Caesar dressing

Directions

  1. Cook the Rice:
    In a pot, combine the rice, water, parsley, and chicken stock. Bring the mixture to a boil, then reduce the heat to low. Cover with a lid and let it simmer until the rice is fully cooked.

  2. Cook the Chicken:
    While the rice cooks, heat a pan over medium-high heat. Add the chicken and your favourite BBQ sauce. Add the sauce gradually while cooking instead of all at once for extra saucy chicken. Once the chicken is fully cooked, turn off the heat and set it aside.

  3. Prep the Veggies:
    Chop the romaine lettuce and red onion, and grate the Parmigiano Reggiano.

  4. Assemble the Bowl:
    Start with a base of rice, then layer on the romaine and red onion. Add the BBQ chicken on top, drizzle with Caesar dressing, and finish with grated Parmigiano Reggiano.

Note: For a fresh twist, try lemon rice instead. Replace the chicken stock with the zest and juice of one lemon when cooking the rice.
