Blueberry Overnight Oats

Ingredients

 ⅓ cup Plain greek yogurt

 ½ cup Rolled oats (heaping)

 ⅔ cup Almond milk

 1 tbsp Lemon juice

 1 tbsp Chia seeds or ground flax

 ½ tsp Vanilla

 1 pinch Salt

 1 tbsp Honey or Maple Syrup (use 2 tbsp if you prefer a little sweeter)

Directions

Whisk together all ingredients in a medium-sized mixing bowl. Top with extra blueberries. For two smaller servings, spoon into two cup size jars, or for one larger serving, spoon into a pint or half liter jar with a tight-fitting lid.

Close and refrigerate for at least 4 hours, but preferably overnight, before eating.

Note: this works with frozen blueberries as well. You may also substitute another berry for the blueberries if you prefer.
