Baked Turkey & Spinach Meatballs With Asparagus Orzo

Serves: 6-8 as a meal Prep time: 15 min Cook Time: 30 mins Total Time: 45 mins

Ingredients

8 cups spinach finely chopped

1 bunch green onion finely diced

3 tbsp Herbs Crushed Garlic

1 lb ground turkey

3/4 cup panko

1 large egg beaten

1/2 cup grated parmesan

Salt & pepper to taste

2 tbsp butter

1 cup orzo pasta

1 1/2 cups chopped asparagus

2 cups chicken broth

Directions

Turn on oven to 375 degrees.. In a large bowl mix together the turkey, egg, green onion, half of the spinach, 2 tbsp garlic, salt, pepper, panko and parmesan. Form into 1 or 1.5 inch balls and place on cookie sheet and bake for 15 mins. While your meatballs are cooking, in a pan add the butter and melt on medium high. Once your butter is melted add your orzo and toast lightly (About 5 mins/stirring occasionally) Add the asparagus, remaining spinach, broth, tbsp of garlic and salt & pepper then stir and cover on low heat until broth is dissolved. Plate your orzo/asparagus/spinach mixture and top with meatballs and extra parmesan. Enjoy!
