Auntie Di's Beef Barley Soup

Serves: 6-8 for meal. Prep time: 25 min Cook Time: 35 mins Total Time: 55 mins

Ingredients

1 lb lean ground beef

3 carrots diced

3 celery stalks diced

1 med size onion diced

6 large mushrooms diced

6 cups of beef broth

1 large can diced tomatoes

1 tbsp minced garlic

1 tsp dried oregano

1 tsp dried basil

3 tbsp worcestershire

2 tsp tobasco

1 tsp chili flakes

1/2 cup dried barley

salt & pepper to taste

Directions

In a large soup pot start browning your beef and part way through add onion and mushrooms. Once your beef is fully cooked add garlic, broth, tomatoes, celery, carrots, oregano, basil, worcestershire, tobasco, chili flakes, salt and pepper. Bring to a light boil and turn down to medium low and let simmer for about half hour. In the last 5-10 minutes add your barley. Enjoy!
