Roasted Asparagus Bacon & Cheese Tart

Serves: 16, Prep time: 25 mins, Cook time: 20 mins

Ingredients

 1 Large Bunch Asparagus

 1 tbsp Olive Oil

 1 Lemon for Zest

 2 Sheets Puff Pastry (not sold here)

 1 Package Boursin Cheese

 1 cup Gouda or Asiago Cheese, grated

 10 Slices Cooked Bacon, chopped

 1 Egg

 2 tbsp Mint Leaves, torn

Directions

Preheat oven to 400*F

Chop the rough ends off the asparagus.
In a bowl toss asparagus, olive oil, lemon zest, salt and pepper. Set aside.

Unroll sheets of puff pastry (or roll out to roughly 10 x 15 inches). Use a paring knife to score a line around the perimeter of the pastry, about 1 inch from the edge. Place on parchment lined bake sheets (you'll need two sheets). With a fork, poke holes all over pastry within the border, so that this part remains flat during baking, while the border will puff up.

Crumble half package of Boursin on each piece of puff pastry. Then sprinkle the asiago (or gouda) and chopped bacon over the pastries.

Top with the marinated asparagus.

Mix the egg with approx 1 tsp water. Use a pastry brush and spread the egg wash along the border.

Place the tarts in oven and bake for 20-22 minutes, until golden. Serve warm or room temp with mint leaves. Makes 16 wedges.
