Serves: 4, Prep time: 15 mins, Rest time: 30 mins, Cook time: 30-mins Total time: 1hr 15 mins

Ingredients

5-6 medium yukon gold potatoes

2.5 tbsp olive oil

salt, to taste

1/4 tsp pepper

1/2 tsp dried dill

Package of brown gravy

Squeaker’s Cheese Curds (found in our deli cooler)

Directions

Peel and cut potatoes into 1/4 inch strips. Soak in cold water for 30 minutes. You can leave them for hours if you do them in the morning. Soaking helps to remove excess starch.

Preheat oven to 450, or 435 convection bake.

Strain fries and pat dry with paper towel. In a large bowl, toss with olive oil. Spread out on a cookie sheet. Don’t let the fries stack; you may need two cookie sheets.

Place into the oven for 15 minutes.

While fries are baking, prepare gravy according to package directions.

After 15 minutes, remove the fries and flip. Then season with salt, pepper, and dill. Bake another 5-10 minutes. We kept the fries in for another 1 1/2 minutes on broil to crisp a little more.

Remove fries. Arrange on separate plates or in one baking dish. Add cheese curds on top. Ladle gravy evenly over top.

Serve immediately and enjoy!

Feel free to add bacon, pulled pork, steak, or shredded chicken to the top of this!

Tip: Try to make only as much poutine as you plan to eat. It doesn’t make very good leftovers, as the fries will get soggy.
