Pepernoten (kruidnoten)

Serves: Gallon cookie jar full, Prep time: 30-45 mins, Cook time: 10 mins

Ingredients

1 c flour

1/2 c sugar

1/8lb or 50g ground almonds

1/2 c honey

2 tsp cinnamon

1 tsp ground cloves

1/2 tsp nutmeg

1/2 tsp allspice

1/2 tsp cardamom

1 tsp potash or baking soda

1 tsp baking ammonia or baking powder

1 egg

Directions

Mix sugar, flour, and almonds in a medium bowl. In the microwave, heat the honey in a glass measuring cup for about 45 seconds. When the honey is warm, add spices. Then add the honey mixture to the flour and mix. Let cool.

Dissolve ammonia (baking powder) in 1 tbsp of water and add to first mixture. Add remaining ingredients. Mix to form a ball. Knead and add additional flour until it’s not sticky anymore. (we used about a cup extra flour, but add just a bit at a time.)

Using your fingers, pinch off about a 1/2 tsp of dough. Roll into small balls a quarter to a half inch wide. Depending how big or small you like them, you can adjust the sizing. They will about double in size. Put the rolled balls onto a cookie sheet and bake at 350 F for 8-10 minutes until lightly browned.

Let cool completely. These are meant to be a crispy type cookie, so don’t be worried if they aren’t soft. Store at room temperature in air tight container.
