Oatmeal Honey Raisin Cookies
Serves: 14, Prep time: 30 mins, Cook time: 15 mins
Ingredients
1 ¼ cups Quick Oats
½ cup All Purpose Flour
1 ½ tsp Baking Powder
1 ½ tsp Cinnamon
½ tsp Salt
2 tbsp Unsalted Butter, melted
1 Large Egg, room temperature
1 tsp Vanilla Extract
½ cup Honey
½ cup Raisins, soaked in warm water
Directions
Soak raisins in small bowl with hot water for 5 minutes then drain.
Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the butter, egg, and vanilla. Stir in the honey. Add liquids into the flour mixture, stirring just until incorporated. Fold in the raisins. Chill the cookie dough for 30 minutes.
Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat.
Drop the cookie dough into 14 rounded scoops onto the prepared sheet, and flatten slightly. Bake at 325°F for 11-14 minutes. Cool on the pan for 10 minutes before transferring to a wire rack.
Store in airtight container at room temperature or in fridge.
Notes:
Because they're chilled, these cookies do not spread out a lot while baking, so make sure you press them down a bit with your fingers or a fork before baking.
Soaking the Raisins helps them be soft and plump in the cookies. We highly recommend not skipping this step!
