Greek Quinoa Salad

Serves: 8-10 as a side Prep time: 45 min Cook Time Time: 15 min Total Time: 1 hour

Ingredients

2 cups cooked quinoa

2 cups water

1 large red pepper & yellow pepper chopped into small/med size pieces

1 long English cucumber chopped

1 clamshell of cherry tomatoes quartered

1 cup crumbled feta

1 small red onion diced

1 can chickpeas

1/2 cup Rendezvous Greek Dressing

Directions

In a pot add your quinoa and water and bring to a boil, turn down to low and cover until fluffy.

While the quinoa is cooking chop all your veggies, add them to a bowl along with the chickpeas and half the dressing and set aside. Once your quinoa is cooked transfer it to a bowl and mix in the other half of the dressing while it’s still warm and then put it in the fridge to cool for about 20 minutes (stir halfway through) Once your quinoa is cool stir in your veggie mixture, top with feta and enjoy as a side, lunch salad or entrée with souvlaki chicken.
