Fried Ice Cream - Mexican Dessert
Serves: 4, Prep time: 20 mins, Freeze Time: 3 hours, Cook time: 2 minutes Total time: 3.5 hrs
Ingredients
2 cups vanilla ice cream
1 egg
2 tbsp milk or cream
1 1/2cup crushed corn flakes
1/2 tbsp cinnamon, (add another 1/2 tbsp if desired)
1/8 tsp salt
oil for frying, we used canola
Directions
Form 1/2 cup portions of ice cream into round balls with your hands. Place on a cookie sheet and freeze for 1 hour.
Whisk together the egg and cream in a small bowl. In another bowl, crush the cornflakes and add the cinnamon and salt.
Take the ice cream out of the freezer, roll ice cream balls in egg and then roll in corn flake mixture. Place back onto the cookie sheet, and freeze for another hour. Repeat this step if desired. You may need more egg and cornflakes.
In a medium pot or deep fryer heat oil to 375. When oil has reached the correct temperature, take ice cream balls out of the freezer, and drop into hot oil immediately. They only need to cook for 12-15 seconds until outside has crisped and browned.
Serve immediately with whipped cream, cinnamon, and a drizzle of honey or chocolate.
