Broccoli Kale Caesar Salad

Ingredients

3 small broccoli crowns

1 bunch of kale

2 green onion

1 cup grated parmesan

Dressing

1/2 cup Greek yogurt

1tsp grainy Dijon mustard

2 tsp Herb’s Crushed Garlic

2 tbsp Worcestershire sauce

2 tbsp olive oil

2 tsp fresh lemon juice

1/4 cup grated parmesan cheese

salt & pepper to taste

Directions

  1. Chop the kale and broccoli into bite-sized pieces.

  2. Slice the green onion and add everything to a large bowl, along with the freshly grated Parmesan cheese.

  3. In a small bowl, whisk together all the dressing ingredients except the cheese.

  4. Once the dressing is well combined, stir in the cheese with a spoon.

  5. Pour the dressing over the salad and toss until everything is evenly coated.

  6. If you like a really creamy broccoli salad, double the dressing recipe.

  7. Optional but delicious: Add crunchy bacon for extra flavour!

  8. The salad can last in the fridge for up to 3 days, but for the best flavor and texture, enjoy it within 24 hours.
