Boterkoek

Boterkoek is a dense buttery cake with almond flavour. This version is slightly fluffier than the typical boterkoek, but still denser than a regular cake.

Serves: 10-12 Prep time: 15 mins, Cook time: 25-30 mins, Total time: 45 min

Ingredients

Crust

1 c butter (230g)

1 c sugar (200g)

1 large egg, room temp

1 1/2 tsp almond extract

2 1/3 c all-purpose flour (285g)

1/4 tsp salt

1/2 tsp baking soda

1 egg, beaten with splash milk for egg wash

shaved/sliced almonds, for topping

Directions

Preheat oven to 325F convection bake or 350F regular.

In a large bowl, cream the butter and sugar. Beat for 3 minutes until very light and fluffy. Add the eggs and almond extract. Beat one more minute. In a small bowl, whisk together the flour, salt, and baking soda. Add to rest of ingredients and mix until combined. Don’t overmix.

Grease a 8inch round cake pan with butter or oil. Press dough into bottom of pan and spread out as flat as possible. A butter knife or spatula helps with this. Then brush the top with egg wash. Using a fork make criss-cross lines in the top and then sprinkle with sliced almonds. Bake for 25-30 minutes.

Let cool and serve. Best enjoyed at room temperature!
