Blackberry Cream Cheese Cobbler
Serves: 15 qt, Prep time: 20mins, Cook time: 35 mins
Ingredients
Blackberry Filling
5 cups Fresh blackberries (wild ones work too)
½ cup White sugar
4 tbsp Corn starch
½ tsp Cinnamon
½ tsp Almond extract
4 lbs Concord grapes
Cobbler Topping
2 ½ cups White flour
¾ cup White sugar
½ cup Brown sugar
1 tbsp Baking powder
1 tsp Baking soda
½ tsp Salt
½ cup Butter, melted
¼ cup Milk
Cream Cheese Layer
8 oz Cream cheese, whipped
Directions
Blackberry Filling
In a medium sized bowl, stir the blackberries, 1/2 cup sugar, corn starch, cinnamon, and almond extract together. Let sit for 30 minutes.
Cobbler Topping
In a medium size bowl, blend the flour, white and brown sugar, baking powder, baking soda, and salt together.
Add the vanilla to the melted butter and stir before adding to the the flour blend. After stirring around until crumbly, add the milk. Mix until thoroughly combined.
Put it together
Spay inside of glass or ceramic 9x13 dish with non-stick cooking spray.
Spread out blackberry filling mix evenly into bottom of the baking dish.
Scoop dollops of the whipped cream cheese on top and spread out over blackberry filling.
Crumble cobbler mixture over the blackberry/cream cheese layer in the baking dish, and evenly distribute.
Bake for 30 minutes in a preheated 350 degree oven, or until sides are hot and bubbly and top is golden brown.
Serve with whipped cream or vanilla ice cream and enjoy!
Note: We used 1 cup of whole wheat flour and 1 1/2 cups white flour, and the topping turned out just fine!
