Baked Apple Almond Cheesecake

Serves: 10 Prep time: 25 mins, Cook time: 35 mins Total Time: 1hr

Ingredients

1/2 c butter, softened

1 c sugar

1 c flour

250g (8oz) cream cheese

1 egg

1/2 tsp vanilla

1 tsp almond extract

1/2 tsp cinnamon

4 c sliced peeled apples (about 4 medium apples)

1/4 c sliced almonds

Directions

Preheat oven to 425 F. Beat butter and 1/3 c of sugar in a small bowl with an electric mixer on medium speed until light and fluffy. Add the flour and mix well. Spread this firmly into the bottom and 1 inch up the side of a 9in springform pan or 8” square pan.

Beat the cream cheese and 1/3 c of the remaining sugar with an electric mixer on medium speed until well blended. Add egg, vanilla and almond extract and mix well. Spread evenly over the crust. Combine remaining 1/3 c sugar and the cinnamon in a large bowl. Add the apples and toss to coat. Arrange over the cream cheese layer, and sprinkle with almonds.

Bake 10 minutes. Reduce the temperature to 375F and continue to bake for 25 more minutes, or until the centre is set. Cool on a wire rack. Loose the cake from the rim of the pan by sliding a butter knife around the edges. Cover and refrigerate at least 3 hours before serving. Store any leftovers in the fridge.
