Halloumi (or Halloom) is a type of unripened & brined cheese that I just discovered earlier this year. You can grill it. YOU CAN GRILL IT!!!!!!
In fact you should grill it. Like tofu in texture, and meat in the way it grills (it doesn’t melt), it has a salty taste and is pretty bland like mozzarella…..until you magically transform it on the grill.
It is traditionally made from sheeps milk, but in North America you will likely find it only made from cows milk.
